Ployes are a staple in the very northern tip of our great state of Maine, known as the St. John River Valley. They are very quick and easy to use and to say the least they are exceptionally delicious. Similar to a crepe, the batter is thin, you do not have to flip them over like a pancake, and they cook quickly in a hot pan or on a hot griddle. Often a great substitute for pancakes. They are thin so you can butter them and roll them up and hold them between your fingers to enjoy them or cover them with maple syrup or your favorite jam or preserves. Try them soon, they will be a new favorite!
